About Me

Hi, it's me...Hi!  Thanks for taking a look at my blog.  I’m new at this and it might show; just an tiny, tiny bit.  I consider this project a work in progress and welcome lots of feedback, so don’t hesitate to contact me. But, alas, this is my about page and from the title, About Aspen you might be wondering if you accidentally clicked on something funny.  But, no.  I am Aspen.  My parents were hippies.  I’m named after the tree, not the city in Colorado although I am originally from Colorado.  Okay, did we get that out of the way?

Fcubed is designed to be a conglomeration of all things I love: food, family and fitness.  Let’s start with family.  After all, none of this would be possible without their amazing support.  I have a sweet, sweet hubby and two little boys aged three and five.  My boys are pure boys.  They figured out they could have a gun with them at any time in the form of their finger before they figured out how to use the toilet.  They keep me on my toes and are so much work, but so worth the effort!  I hope to contribute projects, thoughts and fun things to share with the whole family…like food.

I grew up in a small mountain town (no, not Aspen, silly) and had parents that did things a bit differently.  We ate healthily, almost never ate out, grew food in the garden, the whole bit.  My mom and dad are both excellent cooks.  My childhood is peppered with memories of my dad’s biscuits and burgers on weekends and my mom’s extravagant open houses featuring a menu to die for, but also day-to-day food that was excellent.  I never realized how good I ate as a child until I moved out of the home.  Since getting married and having my boys life seemed to get away from me.  We were eating out a lot, getting sick with frequency and carrying extra weight.  I made a conscientious decision to turn things around and spend more time in the kitchen.  For me, preparing our food started as a bit of a chore.  Every Saturday I would get out my notebook and plan our menu.  On the next page I’d make the shopping list.  The four of us would hit the two stores we needed and go home, put the groceries away and prepare for the week ahead.  (Heck, this is what we still do, but I am a little more easy going about planning menus and can grab what looks good or is on sale and figure out what to do with it.)  And slowly, we became healthier, caught fewer colds, and a lost a few pounds.  And then cooking became fun and inspiring and an outlet for creativity.  I starting posting food pictures to Facebook and getting recipe requests, so now I’m here, sharing what has become one of my loves with whoever passes by.

I made fitness a component of the blog since for me food and fitness go hand in hand.  I have been a runner since high school and running is truly my fitness passion; it is one of the few things I am able to keep up with on a regular basis, even through having babies.  There really is nothing like going on a run feeling weighed down and returning from that run with the answers to all the problems of the world.  I am working to become a certified personal trainer and have recently been hitting the weights pretty hard.  I know that eating well and exercise make me a happier person and since the boys are getting a bit older and less dependent on me I’ve found time to really remember how much I love being in shape.

  1. Hey there Aspen. Just found you through Orthodox Mom. Sure glad I did. You and I sound quite similar. Gonna follow you and glean from your healthy lifestyle. I too, love eating healthy, preparing healthy food for my family (6 yr old boy, 3 yr old girl) and fitness. I am certified in fitness and nutrition and used to be an exercise fanatic. But, like you, having a family doesn’t allow me three hours of fitness daily anymore. Now I’m big on HIIT.       So happy to have you, thanks for coming by and thanks for the comment. I’ll check you out, too. Can you imagine, three hours to workout? I miss my free time but I wouldn’t trade the kiddos for any of it.

      • I hear ya. Actually, I’m loving the HIIT. I get super results in little time. Ya, I love my kiddies too much too. Would never trade them for the free time.
