I totally have that post-nasal drip, head throbbing, sore throat thing going on today. You know the kind? Where all you do is drink, and drink, and drink but only feel a minimal amount of relief.
I wanted something that was refreshing but went down easy. I came up with this chia pudding and it hit the spot. At least for a minute or two. The pudding contains chia, mango, lime, blueberries and coconut milk. The mango, lime and blueberry contain a good amount of vitamin C, among other anti-oxidants. The ginger is anti-inflammatory. The chia and coconut milk contain protein. Basically this pudding is a win, even when you are not sick. Without further ado: Mango Lime Chia Pudding {PALEO}.
Mango Lime Chia Pudding {PALEO}
Ingredients:
- 1 ripe mango, peeled and chopped
- 3/4 cup blueberries
- 1 inch fresh ginger, sliced
- 1/2 cup full fat coconut milk, the canned kind
- 1 teaspoon maple syrup
- juice from half a lime
- 1/4 cup chia seeds
Directions:
- Blend the first six ingredients in your blender for a couple of minutes.
- Pour the blended mixture into one or two re-sealable glass jars.
- Add the chia seeds and shake.
- Let chill in the fridge for at least three hours, or overnight.
- Eat and enjoy!
And, in case you are wondering, Emron graced me with a “thingy” this morning. I guess the last date of February 7, 4014 is null and void. 🙂
