Mango Lime Chia Pudding {PALEO}

I totally have that post-nasal drip, head throbbing, sore throat thing going on today. You know the kind? Where all you do is drink, and drink, and drink but only feel a minimal amount of relief.

I wanted something that was refreshing but went down easy. I came up with this chia pudding and it hit the spot. At least for a minute or two. The pudding contains chia, mango, lime, blueberries and coconut milk. The mango, lime and blueberry contain a good amount of vitamin C, among other anti-oxidants. The ginger is anti-inflammatory. The chia and coconut milk contain protein. Basically this pudding is a win, even when you are not sick. Without further ado: Mango Lime Chia Pudding {PALEO}.

Mango Lime Chia Pudding {PALEO}

  • Servings: 1-2

Ingredients:

  • 1 ripe mango, peeled and chopped
  • 3/4 cup blueberries
  • 1 inch fresh ginger, sliced
  • 1/2 cup full fat coconut milk, the canned kind
  • 1 teaspoon maple syrup
  • juice from half a lime
  • 1/4 cup chia seeds

Directions:

  1. Blend the first six ingredients in your blender for a couple of minutes.
  2. Pour the blended mixture into one or two re-sealable glass jars.
  3. Add the chia seeds and shake.
  4. Let chill in the fridge for at least three hours, or overnight.
  5. Eat and enjoy!

And, in case you are wondering, Emron graced me with a “thingy” this morning.  I guess the last date of February 7, 4014 is null and void. 🙂

Vanilla Blackberry Chia Pudding {PALEO}

Monday, Monday!  Did you see that exclamation point there?  For a Monday?  Yes!!  The kiddos are back in school today; no snow day, no late start and I just had a great workout.  It is leg day.  I usually loathe leg day.  It’s hard and it hurts, and I feel like I have not seen as big of gains lifting legs as I have with other parts.  But today was great.  I met with my super star lifting buddy and we ran a cool 3.35 miles.  The weather was just right for us to be comfortable in tights and long-sleeve shirts, which is to say that it wasn’t freezing all of my runs in recent history!  Then we hit the weights ,worked hard, grunted and got it done; front squats, Romanian split lunges, dead-lifts.  Done!  Upon arriving home I filled my tummy with some chia pudding, in fact, I have the recipe right here for you.  Pretty cool, huh?

So here it is: Vanilla Blackberry Chia Pudding {PALEO}.

A good breakfast or snack option for the Paleo lifestyle.  This can be eaten on the go.

Vanilla Blackberry Chia Pudding {PALEO}

  • Servings: 1-2

Ingredients:

  • 1/2 cup full fat coconut milk
  • 1 cup fresh blackberries
  • 1 Tablespoon almond butter
  • 1 Tablespoon maple syrup (more or less, to taste)
  • 1 teaspoon pure vanilla
  • 1/4 cup chia seeds

Directions:

  1. Put all of the ingredients EXCEPT for the chia seeds in your blender.
  2. Blend until smooth.
  3. Pour the mixture into one or two re-sealable glass jars.
  4. Add the chia seeds and shake well to mix.
  5. Chill in the fridge for at least 3 hours or overnight.
  6. Breakfast is served!  Enjoy!

Notes:  This is great with fresh berries or other fruit.  I made a little berry parfait and topped it with my Maple Cinnamon Almonds.  So good!

Also, in case you needed another reason to try this recipe, did you know that blackberries are super high in antioxidants and they have anti-inflammatory benefits, too?  Lastly, Amy, I meant to ask you up for a post-work out snack, but my brain went to post-workout mush.  Tomorrow maybe?
