Coconut Cilantro Coleslaw {PALEO}

Friday, Friday, Friday!!  I’m just a little excited for the weekend, just a little bit!  I hope you’ve enjoyed the week, it’s been a good one here.  Lots of good workouts and no snow days.  I’ve been building all week to a simple and delicious meal.  So make sure to scroll down past the recipe to see how to put it all together.

Today it’s C cubed.  Coconut Cilantro Coleslaw {PALEO}:

Coconut Cilantro Coleslaw {PALEO}

  1. Mix everything in a large bowl.
  2. Eat and enjoy!

And so there you have it.  All week we’ve been building an impressive yet easy meal.  Here’s what you do:

  1. Make my Ginger Mango Salsa and Creamy Avocado Lime Dip.  If you make the salsa first the flavors will have more time to meld together, and if you ask me melded flavors are better than plain ones.  Make sure to chop extra cilantro to mix into the slaw.
  2. Toast some coconut, like a cup or so, put it aside to let it cool.
  3. Mix together the slaw following the guide above.  Use as much or as little of each ingredient, depending on how you like your coleslaw.  Set aside.
  4. Mix together the leftover toasted coconut and 1 tablespoon each, coconut flour and arrowroot flower.  Add some salt and pepper.  Bread either chicken breast or white fish (like cod or halibut) in the mixture.
  5. Heat up some coconut oil in a skillet over medium high heat.  Fry the chicken or fish.
  6. Plate your protein of choice by placing a big dollop of the creamy avocado lime dip on your plate, then putting the chicken or fish on top.  Spoon the Ginger Mango Salsa on top of that.
  7. Place the slaw on the side.
  8. Devour!
