Overnight Chocolate Coffee Chia Breakfast Pudding {PALEO}

First, this is not my recipe.  I got it from Paleomg.  It’s really, really good.

Second, some food just doesn’t photograph well.  I played with this photo, as well as others, then decided there wasn’t much I could do.

Third, despite everything, I really think you should try this.

Apparently, though not surprisingly, I am a little late to the chia seed super-food party (I try to be on time, promise), but here’s what I’ve learned.  Chia seeds are really those chia seeds, yup, the same thing you’d find in a Ch- ch- ch Chia Pet kit, but please don’t eat those ones.  Chia seeds are good source of omega-3 fatty acids, fiber and protein.  They have been around for a loooooong time, like think the Pre-Columbian times long.  In fact Chia may have been just as important of a food crop as maize.  Chia is a member of the mint family, too.  And all of this is really interesting, but the most interesting thing about chia seeds, at least from a food perspective, is that they are able to absorb a lot of liquid.  So, in a chia pudding recipe, they end up tasting and feeling a lot like tapioca balls.  And I like that.  Here it is: Overnight Chocolate Coffee Chia Breakfast Pudding {PALEO}.

Overnight Chocolate Coffee Chia Breakfast Pudding {PALEO}

  • Servings: 1-2
  • Difficulty: easy
  • Print

  • 1/2 cup brewed coffee, chilled
  • 1/2 cup full fat canned coconut milk
  • 1 heaping Tablespoon almond butter
  • 1 teaspoon vanilla
  • 2 Tablespoons maple syrup
  • 1 Tablespoon unsweetened cocoa powder
  • 1/4 cup chia seeds


  1. Brew your coffee, then put it in the fridge to chill.
  2. Add the chilled coffee, coconut milk, almond butter, vanilla, maple syrup and cocoa to your blender.  Blend until well combined.
  3. Pour the contents of your blender into a re-sealable jar or two (I used two).  Add the chia seeds and shake well.
  4. Refrigerate overnight or at least three hours.  Serve and enjoy!

Note: I noticed there was a lot of settling in my jar, so upon eating the breakfast pudding, I microwaved it for 5 seconds.  Then I stirred everything up really well.  This yielded better results.

    • It is soooo good! I love easy mornings, don’t you? Have you tried making your own almond butter? I’ve done it and it takes a lot more processing than you would think, but the results are good. You just need to be patient. Let me know what you think!

      • I would love to make my own almond butter, however I live in Brazil and the price of almond here is atrocious. I make my own peanut butter and I’ve tried making cashew butter before, but it didn’t come out very good. It was dry and difficult to spread.
