Almond Apricot Balls {PALEO}

I love that eating a Paleo diet means not feeling the need to snack all the time.  Simply, my meals are bigger and more filling and so I’m not hungry at 10 and 3.  Usually.  Some days are different.  Some days I want something sweet and healthy.  Some days it’s too cold for a smoothie.  This was one of those days.  So after gathering a little inspiration, I came up with these guys.  And then I ate a few of them.  I hope you enjoy these Almond Apricot Balls {PALEO}.

Almond Apricot Balls {PALEO}

  • 1/3 cup almonds
  • 10 dried apricots, I used Turkish ones (unsulfured preferred)
  • 10 dates
  • 1/4 cup dried coconut
  • 1/2 Tablespoon maple syrup


  1. First things first.  Lets roast those almonds.  There are lots of ways to toast nuts.  You can do it in a skillet on the stove, in the microwave or in the oven.  I used my toaster oven, placed the almonds on a baking sheet, laid them out nice and flat, and turned to oven to 400.  About five minutes later they were done.  You can tell your nuts are roasted when they start to smell nutty and you see a bit of oil from the nut.  You can even hear them start to make a popping noise if you listen really carefully.  One thing is for sure, pay attention while you roast your almonds, burned nuts are gross!  Put the roasted almonds aside to cool.
  2. In a food processor add the apricots and dates.  Puree for a minute or so, until finely chopped.  Add the almonds and coconut.  Puree again, this time for at least a minute or until everything starts to come together.  It will come together, just be patient.  Then add the maple syrup and pulse a few times.
  3. Form balls.  Just grab the mixture and roll it into balls.  I made 12 and they were about 1/2 tablespoon size.  Done!  Eat and enjoy.
  4. Store in an airtight container; three days at room temp, three weeks in the fridge.

NOTE: I thought I’d engage the kiddos and had them roll the balls in different “toppings.” We used cinnamon and cocoa. Toasted coconut would be nice, too. Oh! And these would make a great Paleo long run snack.
