Banana Nut Muffins {PALEO}

Who likes banana bread?  Coconut?  Walnuts?  I like all three of those things.  And I like this recipe for paleo friendly muffins.  AND I like not having to throw away overly ripe bananas.  If you’ve got some ripe bananas and aren’t quite ready to bake with them mash them up, put them in a little baggie or whatever you like to use, label (1 ripe banana) and place it in the freezer.  You’ll be set next time you want to make banana bread or muffins or smoothies…

Banana Nut Muffins

Banana Nut Muffins {PALEO}

  • 3/4 teaspoon each baking soda and baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 2 Tablespoon melted coconut oil
  • 2 large eggs, lightly beaten
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla
  • 2 ripe bananas, mashed
  • unsweetened coconut flakes and walnuts for a topping


  1. Preheat your oven to 350 F.  Prepare your muffin pan or bread pan by lightly coating with coconut oil.  I use the spray kind from Trader Joes.  I love that stuff!
  2. In a large bowl whisk together the dry ingredients (baking soda, powder, salt, cinnamon, nutmeg and both flours).  Set aside.
  3. Then measure out your coconut oil.  It’s cold around these parts as of late and so my coconut oil is in a solid state.  I scoop it out of the jar with a tablespoon and level it off, then I place it in a small glass bowl and microwave until melted (about 30 seconds on high).  Whisk in the beaten eggs to the now melted oil.  Add the maple syrup and vanilla.  Stir.  Then add the bananas, make sure all the wet ingredients are well combined.
  4. Add the wet ingredients to the dry until just moist.  Do not over stir here people!
  5. Fill your muffin cups about 3/4 of the way full until you are out of batter.  If you’re making bread instead just dump the batter in the pan.  Top with as much or as little walnuts and coconut you want.
  6. Bake the muffins for 20-22 minutes.  For bread you’ll need 45-55 minutes.  Test for doneness by inserting a toothpick into the bread or a muffin.  If it comes out clean they are done.  Enjoy!
